Who Doesn't LOVE Guacamole?

Guacamole is an easy, healthy way to brighten up a dish or pair with your favorite veggie! We love guacamole at my house.  As infants, my kids would eat it with a spoon. Haha!

As long as you skip the chips, guacamole is very healthy! We love to use it as a dip for our veggies, a topping for tacos and taco salad, as well as a spread for sandwiches and wraps. 

So versatile and easy to make, so pass on the store bought stuff because fresh guacamole will knock your socks off!


Ingredients:

4 ripe avocados, chopped
2 limes
1 lemon
1/4 medium red onion, finely chopped
3 Roma tomatoes, finely chopped
2 cloves of garlic, finely chopped
1/4 cup finely chopped fresh cilantro
salt and pepper to taste

Directions:

In a medium sized bowl combine avocado, onion, tomato, garlic and cilantro. 

Add the juice of the limes and lemon. Mix well. 

Add salt and pepper to taste.

***This recipe makes A LOT, so share with friends or portion it into resealable bags to eat over a couple days!***
