Sweet Potato Chicken Taco

My favorite recipes are the ones that don't really need a recipe.  The kind you can easily throw together, give your own spin and it's still delicious and healthy! Delicious is key!

Tonight's dinner did not disappoint!



Ingredients:

2-4 chicken breasts
1 jar of your favorite salsa
1 cup fresh or frozen corn
1 can black beans, drained and rinsed
4 medium sweet potatoes
chili powder

Optional toppings:
cilantro
Greek yogurt/sour cream
shredded cheddar cheese
chopped green onion

Step 1: Place chicken, salsa, corn, and black beans ingredients in the slow cooker. Cook on low 6-8 hours

Step 2: Shred chicken using a fork.

Step 3: Poke sweet potatoes with a fork and microwave 4-8 minutes, until they are fork tender

Step 4: Slice sweet potato in half lengthwise, sprinkle with chili powder, top with chicken mixture, and add any additional toppings.
