Frozen Mexican Hot Chocolate Shakeology

Last night I went to a friend's house and we decided to splurge and have a little cheat...some delicious Mexican Hot Chocolate!  It was so yummy.  It was homemade, which made it that much more scrumptious!

Anyone that knows me well, knows that I had a HOT CHOCOLATE ADDICTION before starting my healthy journey.  I used to have a mug of hot chocolate to unwind at the end of the night after the kids went to bed.  This wasn't just a Christmas treat...this was an every night treat from November to March.  Talk about chocolate/sugar/calorie overload! Whoa! And I wondered why I couldn't lose weight (I used skim).  Hindsight is 20/20.

So, this little treat last night reminded me how much I love hot chocolate, but I certainly do not want this huge addition of calories to my life for the winter months.  I needed a plan! I love frozen hot chocolate, just as much as the hot version.  This morning I decided to revamp my frozen hot chocolate recipe and make it healthier, something I could have whenever the cravings hit and not feel guilty about it. Mission Accomplished.


It's so easy and delicious! It definitely hit the spot! I know I will be making this many times this holiday season! 

Ingredients:

1 scoop Chocolate Shakeology
1 cup unsweetened almond milk
1 tsp cinnamon
1/2 tsp nutmeg
1 cup ice

Put all ingredients in a blender and blend until smooth. Enjoy!

I do not want to start the New Year with a BURDEN of knowing that I want to get healthy, lose weight, start exercising, etc. That's what I did last year. I had a lot of goals, but no plan. Back Away from the Excuses!

I don't wanna...

I'm tired...

The kids woke up early...

It's the weekend...

After breakfast...

Later...

I'll get started tomorrow...Or Monday...

The kids are awake, I should be with them...

I don't have time...

I missed yesterday, so why bother... 





I have used ALL of these excuses! Repeatedly!  As a Beachbody coach, I have HEARD all of these excuses.  I am here to tell you excuses don't burn calories! I know this from experience! In the past, I wasted more time making excuses than it would have taken me to work out.  

Do I get the best, most focused workout when my kids are awake and running around?

-->No. But I am setting an example for them, AND I am still getting it done!

Did I wake up this morning super excited to workout?

-->No. I wanted coffee and to decorate my house for Christmas and play with my kids and watch the biggest rivalry in all of football (GO BUCKEYES!)...and I still did all those things after I finished my 30 minute workout. :)

Pumpkin Pie Shakeology

Pumpkin Pie Shakeology

I have never been a fan of pumpkin pie.  Gasp!  I know! It almost makes me un-American! ;)

BUT as I have gotten older I have found an appreciation for ALL things pumpkin!

This year I have really taken hold of my health and eating, so I didn't want to ruin all my hard work by indulging too much on this very delicious holiday. And that's the real ticket: Thanksgiving is just ONE day!  ONE day to indulge in all those comfort foods while remembering to count your blessings and be thankful for all that you have. While I think it's important to be thankful and grateful everyday, I chose to keep my UNhealthy eating to just ONE day. The average American gains about 10 pounds by New Years, and I am determined to not let my past, predict my future.  Skinny jeans on New Year's Eve? Yes, please!

So what's my plan to keep on track and only have ONE cheat day during this time of Thanksgiving:

1) Keep working out:  not only is this a HUGE stress reliever, but it will help keep those extra pounds away

2) Keep eating healthy:  Thanksgiving is only ONE day, and that day I will cheat (and it will be delicious and amazing), but as for the other 6 days of Thanksgiving week, I will be eating clean and healthy

3) Drink Shakeology Daily:  this is a no brainer. Of course, I am going to keep drinking my daily Shakeology to help reduce cravings, give me energy, and boost my immune system! Everyone tends to get sick this time of year, but I am determined to not let it get me...but that's a whole other post...back to Thanksgiving.

Enter Pumpkin Pie Shakeology! Tastes just like pumpkin pie, but without the extra calories, fat and sugar that will wind up on my waist!  I made one everyday this week and I just can't get enough! Besides, aren't we all tempted to have leftover pie for breakfast?  Mine will be Pumpkin Pie Shakeology!


Pumpkin Pie Shakeology

Ingredients:
10 oz unsweetened vanilla almond milk
1 scoop vanilla Shakeology
1 medium frozen banana
2 TBSP pumpkin puree
1 tsp pumpkin pie spice

Add all ingredients to a blender, and blend until smooth.
ENJOY!

Funny story about this little blue chair...

About 8 months ago, I was at the dealership getting an oil change for my van (LOVE my minivan, I don’t care what people say…Minivans rock...I digress). My kids and I were sitting in the children's part of the waiting area. We were watching cartons and coloring.  They said it would take about an hour.  No big deal.  I’m a mom, I know how to pack a diaper bag full of entertainment and snacks to try to hold off the toddler melt downs for at least an hour. 

After about 45 minutes, I was starting to lose them.  The kids were getting bored.  They wanted to go.  I was doing my best to keep up the entertainment, but I was definitely running out of ideas and staring at the clock.

"Ms. Gossett, you're van is ready." Yes! It was starting to get hairy trying to entertain these kiddos. In my excitement I stood up quickly out of one of these blue chairs...only the chair came with me. I had a terribly embarrassing moment of prying the chair off of my tush and putting it back on the floor.

I. was. MORTIFIED!

My face was a shade somewhere between cherry and fire engine. I couldn't get out of there fast enough. I was tired from entertaining, and my pride was trampled under that silly blue chair.

Fast forward 8 months, I have a slow leak in one of my tires that needs fixed, so I find myself back at the dealership.  I drive through a construction site to and from dropping my son at school, so it was only a matter of time before I would have to show my face in the dealership again...with the same little blue chairs. Except this time, I have been eating healthy and exercising.  I have given up the drive thru for clean eating, Shakeology and 30 minute home work outs.  I still hesitate before I sit in that little blue chair, slightly scarred from my last experience. But sitting on the ground in a public place is just gross, I mean really gross, so I take a deep breath, swallow my pride and sit in that blue chair.  I find that not only do I FIT in that little blue chair, but I have some room to spare!!! Woohoo! 

Can’t wait for my next flat tire…Just kidding! ;)

Clean Eating Breadcrumb Baked Fish

Look no further! This healthy, clean recipe will be a winner! It’s quick, easy and yummy!
Healthy eating is such an important part of healthy living.  When I started eating clean, I was, and still am, always on the lookout for recipes that are QUICK, EASY and kid friendly.  I am not making different meals for everyone, so I needed to find something the WHOLE family (including my somewhat picky hubby and preschooler) enjoys. It can be difficult to find clean recipes, so I started looking for healthy recipes that I could tweak, make clean and fit my family’s palate.   This fish is loved by everyone and makes a regular appearance on our menu.

Breadcrumb Baked Fish was a recipe I adapted from a breaded fish recipe I found years ago, but it needed a healthy makeover.  For starters I decided to only cover one side of the fish and to use whole wheat bread crumbs.  I make my own bread crumbs from the stale ends of our whole wheat bread. Who likes to eat the end piece anyway? I let it sit out for a few hours to get nice and stale, then pop the bread in my Vitamix to make crumbs. Bread crumbs will keep for a long time in the freezer!

This fish is so simple to make and quick to clean up! You can have dinner on the table in 20 minutes!
 

Breadcrumb Baked Fish


Start to Finish: 20 minutes
Makes: 4 servings

  • 4 white fish fillets about 6 oz each (tilapia, cod, etc.)

  • 1-2 TBSP prepared horseradish

  • 1 TBSP grated Parmesan cheese

  • 1-2 tsp Dijon mustard

  • ¼ tsp sea salt

  • ½ cup homemade whole wheat bread crumbs

  • Olive oil

Preheat the oven to 400 degrees.  Lay fillets on a foil lined baking sheet, sprayed with olive oil.

In a small bowl combine horseradish, parmesan, Dijon mustard, and sea salt.  Then mix in the bread crumbs. Press mixture on top of fillets and spray lightly with olive oil.

Bake fish on middle rack for 5-10 minutes or until fish flakes easily with a fork.

Welcome to my blog! I’m so excited you are here! 

Let me start by telling you a little story about me.  I am a stay at home mom.  I wipe noses. And butts. I play Candyland. I fix breakfast, lunch, dinner and 2 snacks every day.  I sing. I dance. I play. I READ (with voices). I chauffer. I snuggle and kiss boo boos.

I have no time for myself.

I love my kids, but I was losing sight of me. Everything in my life revolved around my kids. Somewhere, hiding behind the extra weight, baggy clothes and frown, was the mom and woman I was meant to be.  Finally, after many failed attempts, I found what I was looking for.  I had no idea I was looking for it, until I found it.  Self-confidence.  

Back in March of this year (2014), I was terribly unhappy, in most aspects of my life.  I had just moved and I was trying to get settled into a new house, new routine, make new friends for myself and my kids. For someone that is painfully shy, this was hard. Really hard. On top of that I had the self confidence of a gnat. Every time I went into my closet I was reminded of the clothes that no longer fit and all of the emotional eating I was doing. Needless to say, I knew something had to change. I thought I was eating healthy, but yet I continued gaining weight. So I decided to go out on a limb (a skinny, flimsy one that I was sure couldn't hold me) and I bought 21 Day Fix, Shakeology, signed up as a Beachbody Coach, and joined my acquaintance friend’s Challenge Group. Whoa. I didn't know her well, but I had stalked, I mean, watched her transformation on Facebook. And well, it couldn't hurt to try, right? I mean what did I have to lose? (All lot of weight! That’s what I had to lose, like 20-30  lbs).  Starting at the beginning of April I went ALL IN with 21 Day Fix. I learned what healthy eating really looked like, I learned PORTION CONTROL (oh man, did I need this one) and mostly I learned to love me again.  

And you know what? Sure, I lost a few pounds (8 actually, in only 3 weeks), but what I really found was the girl that fights for what she wants, the girl that is persistent, and consistent, and BELIEVES she can do it. She was buried in there, slowly but surely coming back around.
I found my confidence, I found my happy place and in turn, the whole family has benefited. After this first round of 21 Day Fix I was on fire and I haven't slowed down since! 

And if I can do it, I KNOW you can too!
