Clean Eating Breadcrumb Baked Fish

Look no further! This healthy, clean recipe will be a winner! It’s quick, easy and yummy!
Healthy eating is such an important part of healthy living.  When I started eating clean, I was, and still am, always on the lookout for recipes that are QUICK, EASY and kid friendly.  I am not making different meals for everyone, so I needed to find something the WHOLE family (including my somewhat picky hubby and preschooler) enjoys. It can be difficult to find clean recipes, so I started looking for healthy recipes that I could tweak, make clean and fit my family’s palate.   This fish is loved by everyone and makes a regular appearance on our menu.

Breadcrumb Baked Fish was a recipe I adapted from a breaded fish recipe I found years ago, but it needed a healthy makeover.  For starters I decided to only cover one side of the fish and to use whole wheat bread crumbs.  I make my own bread crumbs from the stale ends of our whole wheat bread. Who likes to eat the end piece anyway? I let it sit out for a few hours to get nice and stale, then pop the bread in my Vitamix to make crumbs. Bread crumbs will keep for a long time in the freezer!

This fish is so simple to make and quick to clean up! You can have dinner on the table in 20 minutes!
 

Breadcrumb Baked Fish


Start to Finish: 20 minutes
Makes: 4 servings

  • 4 white fish fillets about 6 oz each (tilapia, cod, etc.)

  • 1-2 TBSP prepared horseradish

  • 1 TBSP grated Parmesan cheese

  • 1-2 tsp Dijon mustard

  • ¼ tsp sea salt

  • ½ cup homemade whole wheat bread crumbs

  • Olive oil

Preheat the oven to 400 degrees.  Lay fillets on a foil lined baking sheet, sprayed with olive oil.

In a small bowl combine horseradish, parmesan, Dijon mustard, and sea salt.  Then mix in the bread crumbs. Press mixture on top of fillets and spray lightly with olive oil.

Bake fish on middle rack for 5-10 minutes or until fish flakes easily with a fork.

Welcome to my blog! I’m so excited you are here! 

Let me start by telling you a little story about me.  I am a stay at home mom.  I wipe noses. And butts. I play Candyland. I fix breakfast, lunch, dinner and 2 snacks every day.  I sing. I dance. I play. I READ (with voices). I chauffer. I snuggle and kiss boo boos.

I have no time for myself.

I love my kids, but I was losing sight of me. Everything in my life revolved around my kids. Somewhere, hiding behind the extra weight, baggy clothes and frown, was the mom and woman I was meant to be.  Finally, after many failed attempts, I found what I was looking for.  I had no idea I was looking for it, until I found it.  Self-confidence.  

Back in March of this year (2014), I was terribly unhappy, in most aspects of my life.  I had just moved and I was trying to get settled into a new house, new routine, make new friends for myself and my kids. For someone that is painfully shy, this was hard. Really hard. On top of that I had the self confidence of a gnat. Every time I went into my closet I was reminded of the clothes that no longer fit and all of the emotional eating I was doing. Needless to say, I knew something had to change. I thought I was eating healthy, but yet I continued gaining weight. So I decided to go out on a limb (a skinny, flimsy one that I was sure couldn't hold me) and I bought 21 Day Fix, Shakeology, signed up as a Beachbody Coach, and joined my acquaintance friend’s Challenge Group. Whoa. I didn't know her well, but I had stalked, I mean, watched her transformation on Facebook. And well, it couldn't hurt to try, right? I mean what did I have to lose? (All lot of weight! That’s what I had to lose, like 20-30  lbs).  Starting at the beginning of April I went ALL IN with 21 Day Fix. I learned what healthy eating really looked like, I learned PORTION CONTROL (oh man, did I need this one) and mostly I learned to love me again.  

And you know what? Sure, I lost a few pounds (8 actually, in only 3 weeks), but what I really found was the girl that fights for what she wants, the girl that is persistent, and consistent, and BELIEVES she can do it. She was buried in there, slowly but surely coming back around.
I found my confidence, I found my happy place and in turn, the whole family has benefited. After this first round of 21 Day Fix I was on fire and I haven't slowed down since! 

And if I can do it, I KNOW you can too!
